Delicious and Healthy Summer Vegetarian Recipes
Summer, believe it or not, is here! Trying to find some delicious and healthy vegetarian recipes to serve up to family and friends is not always that easy. Barbecues are sometimes an issue when the veggie eaters seem to draw the short straw and get left out from the usual fare that comes off the grill. A group of vegetarian friends came round recently and I started looking for BBQ ideas. I found this mouth-watering vegetarian recipe from Quorn.
These smoked chilli and lime spiced vegetarian burgers served with homemade salsa and guacamole seemed like the perfect answer. First of all I made the guacamole really quickly by blitzing some coriander, red onion and avocado until smooth. The salsa was just as easy – simply mixing some deseeded tomatoes with red chilli and some lime juice, coriander, more red onion and seasoning. I brushed the burgers with some oil and put them on the BBQ. After 10 minutes they were done. Once assembled with some lettuce and a slice of avocado in a bun, the succulent burgers looked totally delectable and exactly the same as the high-fat meat version. The taste test came next and the response was superb; tangy, spicy and succulent. In fact the non-veggies were clamouring for a bite they were so much of a hit!
It was nice to be able to cook the vegetarian option outside on the grill at the same time as cooking for the meat eaters without having to prepare something separately in the oven.
